Food, glorious food!

Usually when I blog, it’s about my journey with Christ, life challenges, etc. Today, I’m mixing it up. I’m posting a recipe. Cooking is actually something that I love to do for my family and friends. So, here goes…

My beloved and I really enjoy traveling. One of our favorite places to visit is Carmel, California. It’s a beautiful coastal town that is full of quaint shops and gourmet restaurants. One of our favorite places to eat was a tiny (and I do mean tiny) French restaurant called La Boheme.  Sadly, the owners moved to France. After 30 years in business, their lovely restaurant fell victim to rising rent and a down economy. There is an upside! On our last visit to Carmel, before the doors closed, I had obtained a bottle of their famous Tomato Vinaigrette. Now, they would not share the exact recipe with me but they did have a list of ingredients on the label. Hooray! So after some experimenting; I got it just right! Whenever I make it, I am transported back to that tiny restaurant, sitting across from my beloved and enjoying a delicious meal on our first anniversary 21 years ago. I’m sharing it with you because it’s just too good to keep to myself. I prefer homemade salad dressings because I know exactly what is in them. I hope you enjoy this as much as we do.

Tomato Vinaigrette:

  • 1/4 cup red wine vinegar
  • 2 T. water
  • 1 T. red wine
  • 3/4 t. salt
  • 1/4 t. fresh ground black pepper
  • 1 t. herbs de Provence
  • 2 coarsely chopped Roma tomatoes
  • 1 clove of garlic
  • 2 t. sun-dried tomato paste
  • 1 t. Dijon mustard
  • 3/4 cup safflower or canola oil

Place all ingredients in a blender. (I use my Vitamix) Process until smooth. Store in refrigerator for up to a week. Happy cooking. Image
